Tapioca Maltodextrin: is a modified carbohydrate used to make oils into powders. The tapioca maltodextrin molecule can hold three times its own weight in oil without liquefying. In commercial settings, tapioca maltodextrin is used to make powdered oils for things like butter powder and tangerine-oil flavored “sand” in The Sea dessert among other textured powders.
