Hydrocolloids like agar-agar and xanthangum can seen intimidating or unapealing, but they’re really just long chains of sugar or protein molecules that pull water molecules toward them in various ways thereby thickening the texture of liquid. Old fashioned gelatin and pectin, for instance, are both hydrocolloids.
